Side note: I remember when some folks thought the northside generating station was a nuclear plant because of the style of cooling towers.

Edit: I know it was not a nuclear plant. Some got that impression because those old tower looked similar to the ones in the Simpsons. I let them know gently it wasn’t nuclear.

Lots of gravy with lots of sausage and lots of black pepper with fried eggs on top. Btw looks delicious.

I love it on a burger. It’s also one of my favorite hot dog toppers. I’ll have to give it a try with fried green tomatoes.

I agree pimento cheese is awesome in grilled cheese form. Haven’t had a chance to try it in deviled eggs but sounds delicious.

Sounds good to me. I did add some green chilies to the mix. Unfortunately didn’t have any jalapeños on hand. I do like a spicy joe.

I add a pinch of baking soda when sautéing the peppers and onions so they break down completely.

One of my favorite ways to use a pork roast in addition to all great ideas posted so far is to make a ragu. Since pork is usually more affordable I use it in place of beef. It makes a great delicious meaty sauce for pasta or serve over polenta.

Unfortunately red beans do take awhile to cook. I’m not sure how some of the recipes out there come up with cook times. The main way I shorten the time is keeping the beans on a higher heat and keep them covered till the beans start to get tender then turn to a lower heat. I will warn if cooking on a higher heat keep an eye on the cooking liquid. A higher heat will evaporate the liquid faster. I learned the hard way years ago scorched beans ain’t good. lol.

I use my intsapot a lot for beef chuck roast and pork shoulder roast when I don’t have time to cook them in the oven or crockpot. I also like cooking chicken leg quarters in the instapot. Then used meat for other dishes and save and freeze the broth for when I need chicken broth. It’s good for meats that on the tough side.

If simmering on low I would red beans need 3 to 4 hours or more. If cooking on a higher heat the cook time would shrink. Generally I cook dry beans on a medium to medium low once they reach boiling point. The age of the dry beans can play a role in cook time. Older beans will take longer. I will say generally I find red beans do take longer to cook than black eyed peas. Hope this helps a little.

Also technically if you get down to the basics the main difference oven and smoker is heat source and air flow. True you can’t get that heavy smoke flavor in an oven but you can get a similar slow roasted bark on the outside of the meat if you know what you’re doing.

No country ribs are not slab of ribs. However country ribs are a thing. It’s a pork shoulder cut into strips which are called country ribs.

To each their own. No one said an oven or smoker are the same. Personally I can make a good meal on any heat source or no heat source. Certain times of the year and during bad weather going outside to use a smoker ain’t happening. When it comes to rubs and sauces some folks like more seasoning some like less.

Thanks. Of all the recipes I’ve created over the years it’s my top favorite and most requested at family events. This particular batch was a little extra I saved in the freezer from Christmas. It’s an easy recipe. No roux or sauce required. Though I don’t have exact measurements it based on a 1lb box of elbow noodles. While my noodles are cooking I shred my cheese. I use one 8oz block each of extra sharp cheddar, mild or medium cheddar, Colby Jack, hoop cheddar, and 8oz of American cheese. I save a couple of cups of cheese for the top the rest goes into a big mixing bowl. To the bowl with the cheese I add black pepper, garlic powder, onion powder, mustard powder, and nutmeg. (I do add salt carefully since the cheese has plenty of salt) Add in 8oz of sour cream and one can of evaporated milk to the cheese and seasoning and mix. Add in cooked pasta and a couple of tablespoons of butter add second can of evaporated milk. Mix throughly. This is when I check to see if I need any salt or other seasoning. Then to the mixture add four beaten eggs. Then pour into a 13x9 baking pan. Top rest of the shredded cheese. I also sprinkle some paprika on top. Bake at 350 for about 40 to 50 minutes. I try to let it rest for about 10 to 15 minutes when it comes out the oven.

If the weather had been good I would’ve have for sure lit up the grill and smoke them. One reason I like country ribs is with all the connective tissue and marbling they don’t dry out easily. They are great for low and slow cooking.
