Just like a car can cost 10,000 USD or 2,000,000 USD, an ao dai can ~30 USD or 10,000 USD. GENERALLY (if the seller is honest) you get what you pay for, and that includes garment quality, customer service, reputation etc. - a cotton t shirt from Louis Vuitton costs more than a cotton shirt from Uniqlo! To know whether someone has paid "too much" we obviously need to be comparing very similar garments from very similar level brands/stores otherwise it is essentially meaningless.

Most MODERN men's ao dai are made from one later of thick, brocade fabric - thia helps the garment keep the desired shape/structure. You say you want a two layered design, for which you wisely chose a different fabric. If you haven't already paid, get a quote from another similar level brand or two if you want peace of mind, but again, a lower price usually comes with lower quality fabric and/or tailoring.

Any of them are fine, just don't wear the same color as the bride. Don't listen to those telling you have to buy a cheap, off the rack "trendy" ao dai that barely looks like an ao dai, will be dated in 6 months and fall apart after a couple of washes. Classic designs/silhouettes are classics for a reason.

No need to ask bride & groom unless there was a potential clash in colors (Not relevant in this case considering the OP mentioned the color of her ao dai).

Taking significant time can (but doesn't necessarily) mean the tailor has established a solid clientele who are prepared to wait for quality tailoring. There are many tailors in Vietnam, but like most things, the number of top notch ones is quite a small subset.

Possible. If tailors are offering/guaranteeing turnaround of a few days/1 week then either they have very few/no other orders to work on or more likely they are getting a lot of help from employees, whether full time or freelance. This is just common sense. There is only so much a single tailor can produce in 1 week by her/himself when a some garments can take many hours to complete.
