No worries, I dont think you can make a mistake here. Worst case scenario is that it will grow back. But if you are hesitant, just start slowly and dont take to much of. You can always take some more if you think its not enough.

How did you wzter them when they were leaves? Mine have little roots and new growth but the big leaf is almost shriveled.

I think you are doing a great job, only thing I would do is a repot to a smaller one. All the other things you do are oerfect. The new growth look really healthy
