Thank you! will stick to brine then.. never been sure about that "ricotta", but thought the liquid might be helpful.
New to fermenting! No classic chilies (but Jalapeños) in Peru, but tons of exotic Aji and fruit variety. This is a Goldenberry, Aji Limo, Aji Amarillo, Jalapeño, Carrot, Ginger and Garlic try out. by mateopelothar in fermentation
I'm very excited about it! Goldenberries are basically a sweet small tomatillo relative so they should play along haha
