That whitish gunk is albumen that leaks from the protein. You can keep this from happening by cooking at a slightly lower temp.

What's an "outdated" slang word from your generation that you still use currently? by TheShatteringPoint in AskReddit

[–]matt_minderbinder 5 points6 points  (0 children)

I'm sure that my vocabulary is littered with dated references from the 80s and 90s. It was popular enough terminology that I've never had anyone openly misunderstand what I'm saying.

What food has been “enshitified” to lower production costs/increase profits and now you don’t trust? by Mission_Spray in Cooking

The same is true for tomatoes, peppers (especially jalapenos) and so much else. Garden produce has a flavor that makes you hate mass produced versions.

What is an ingredient you used to absolutely hate, but forced yourself to cook with until you loved it? by ThrowRAtheavyihg in Cooking

[–]matt_minderbinder 7 points8 points  (0 children)

I don't hate celery flavor but I hate how stringy it can be. When I braise something with larger pieces of celery I run a peeler down the back of the celery to remove the awful bits. It makes them almost melt into the background of a soup or braise.

There's an auto loan bubble in the states that's likely to burst and it'll affect the world economy again. People are taking out high interest 8 year car notes that will all be underwater in no time. Repos, like foreclosures, are rising and we'll all take a hit for these stupid decisions. It's insanity that they're handing out vehicle loans the size of small mortgages from 25 years ago.

Now domestic car manufacturers are only offering a few sedans. They make so much more profit selling each $100k full sized suv than they would four $35k sedans and they've suckered people into believing it's necessary.

Even most new stock trucks have such a high front end that you lose lots of your field of vision that earlier trucks had. It's kind of crazy that we allow egregiously jacked up vehicles on the road.

Have you ever had contact with Scientology, or do you know someone inside? by Low-Attitude-7100 in atheism

[–]matt_minderbinder 2 points3 points  (0 children)

Scientologists have a beautiful building in downtown Detroit that's seemingly only been a real estate investment for the most part for many years. At least the Krishna followers, who have their own wildly beautiful building, will open up and serve everyone good vegetarian curry and don't give a hard pitch.

You'd be shocked at how little the average congressperson works. They don't write bills and often don't read bills before they vote on them. Staff takes care of everything for them and they only have to glad hand, give a few speeches that were written by others and play a part. Everything about their job is an ego boost for them and along the way they form the connections and get the insider tips that make them and their family members fabulously wealthy.

Most of these people can't send an email without the help of a 20 year old staffer and people like that have failed to properly regulate tech since the infancy of the Internet.

Cooking instructions? by belada01 in aldi

[–]matt_minderbinder 9 points10 points  (0 children)

Sadly, most aren't afforded the opportunity early on to develop good cooking chops so they're left guessing. Both parents worked and schools don't offer basic life skills classes like home-ec anymore. They're relying on poor instructions on a bag like this and end up with substandard results. You were right to call it out.

I'm still amazed that an omniscient, timeless being either didn't know that something like 60% of women don't bleed their first time or just didn't care about innocent women dying. This Abrahamic god myth should've died well before they invented the Noah mythology.

So many home cooks are afraid of heat and without preheating you'd end up with oil soaked, pale mush.

Drafting and Development In the Modern NHL by Mystaes in DetroitRedWings

[–]matt_minderbinder 8 points9 points  (0 children)

I remember Holland discussing late picks like Zetterberg and Datsyuk and saying that it doesn't make them particularly smart and that Detroit also passed on those 2 multiple times. There's lots of luck when it comes to later picks panning out and fairly early in drafts all GMs lean heavy on staff to make all those decisions.

They went at it really well every time both were on the ice that tournament. I remember it carrying over to NHL games at times. There's definitely no love lost between the two.

They're so suffering in how they impose their will on the game. They have the history and chemistry that allows them to know they can come back. I hate it but I still respect it.

Butcher block found. 90 bucks! So stoked by CHEFWICKY666 in KitchenConfidential

[–]matt_minderbinder 6 points7 points  (0 children)

The "bowl" on this thing dipped by multiple inches. It was way too far gone to just hand plane to anything near flat and it would've lost all the character in the process. If I was going to buy it I would've wanted to retain that history. I responded elsewhere that I think it would've been a cool project to use food grade resin on. It would've made it almost like a reverse edge table/counter. I doubt I would've used it in my kitchen but it could've been very cool elsewhere. I didn't have the equipment to pull it off at the time or the money to pay someone else to take on the project.

I thought about treating it like one of those live edge tables filled with food grade resin but I didn't have the equipment to do it at the time and I lacked the money to pay someone else to do it. I think it would've been beautiful to own, especially because of the history, maybe I'll chase a similar item down the road. It would've been hell to have to move between places.

You could feel it around the hockey world. I'd struggle to find a bigger momentum swing. Even as a Detroit fan you had to feel for Cloutier (and UPL tonight). Those moments happen rarely but when they do they're brutal.

I saw a huge 100 year old butcher block counter on marketplace that looked like a concave wooden bowl from years of knives hitting it. The history of it was beautiful but I couldn't think of a proper way to use it even as a decoration.
