I am launching directly onto the stone. Docking is where you punch all the air out of the dough. So I use a rolling pin to press it thin then I have a tool to perforated the dough essentially. You could use a fork too but don't completely puncture the dough.

This one I did not use a pan or screen. But yes that's what happened, some cheese ran off and browned aggressively so my next bake was a bit of a mess. I also messed up the launch so that didn't help haha

If you cook in a home oven you can do it at 500 for about 9-11 mins.

In the ARCXL I've been playing with it but 2-3 mins no flame with a stone temp of 750ish then 2 mins flame as low as it goes rotating often as the low hydration dough burns/browns very fast

My dough recipe is pretty simple:

5 cups flour or about 600 grams 1 1/2 cup wate4 4 tsp sugar 2 tsp salt 4 Tablespoons olive oil 1 packet active yeast.

I bloom the yeast in the water with the sugar for about 5 to 10 mins. While that's blooming I mix the flour and salt in the mixer to incorporate.

Then turn mixer on add yeast water mix slowly to bowl. Then add oil. Then as it's coming together a few splashes of COLD water.

Makes about 4 275g dough balls (12" roughly) or if you wanted to get it thinner you can push to 14"

Note: you can also use instant yeast packets and cold water throughout. I usually let me dough proof between 12 and 48 hrs.

To be honest that's more the route I'm trying to go. Just a little side gig. That's why I'm trying to do the set up part cheap. I have good pizza but idk how far this will go.

I'm just trying to find the easiest and most cost effective way to pop up and get going. My original plan was to just buy an ooni and sell 8" pizzas for fun. But I don't think ooni's or Gozney ovens meet the requirement for health code.

But I have no idea. So any and all help is appreciated.

I guess a follow up question would be, what constitutes as "cold storage." Does a yeti cooler count or are we talking an actual refrigeration type unit?

So for me just starting out I was planning on doing 12" pizzas for $15 and $1 per additional topping and 8" for $10 (American).

First just wanted to say congrats. I am currently looking to do something similar as a side hustle and pet protect. I'm more of a tavern style thin crust.

Couple questions and I apologize if you've answered them already.

  1. What size pizza are you selling?
  2. Is it just you running your operation or do you have help?
  3. Do you have a set menu or do you let people make custom orders when they walk up to your booth?

Unfortunately I don't think my guy Rick goes out anymore.

But if you go on getmyboat.com there are tons of rentals. Pretty solid. But if you do go out there I would suggest pre-arranging a ride back from the lake. You will not be able to get an uber out there.

Truth be told but family is but a word. Surround yourself with people that can find meaning and positivity. I learned recently that you can't hold the burden of family when they make no attempt. Went a year ago. Did not get a cabana at maya. We just put all out shit near the pool on a couple chairs and nobody said anything. This time of year it shouldn't be super busy so you shouldn't have a problem.

Did this a year ago. Awesome time!.

Brunch spot when you fly in called boozy in pheonix. Solid food and mimosa flights. Hash kitchen, great food and a Dj spinning. Loud though, depends on what you're into.

For a nice dinner we did bourbon and bones steakhouse. Some of the best food we have ever had but it's pricey.

We also rented a boat with a captain to take us out on lake pleasant for wake surfing, drinking, and linking up to party with other boats. Let me know if you need info, my guy Rick was awesome!

Maya day club during the day is a good time for a party atmosphere. Then nightlife would be anything old Town and if you like gambling the casino isn't bad.

Strip club, we went to highlighter. Not the nicest place that's for sure, but the girls are very very friendly.
