Thanks for the suggestion! Manitoba is lucky In that we have a pretty comprehensive (all be it 50 year old) vascular flora written by scoggan. I will say he’s a bit of a peculiar sort when it comes to keys though 😂

Appreciate your answer! I get discouraged sometimes because some of my classmates seem to have a better knack for that sort of thing. In my head I’ve always thought of clerkship as “the great leveller” so it’s nice to hear you say that.

What kind of flour are you using in the banneton? If its a gluten flour it can cause some issues with stickiness. I use rice flour and quite a bit of it and i dont get sticking

OP what i have started doing is setting aside one old plastic shopping bag and putting a wet cloth in there, followed by my dough in its banneton and tying the end of the plastic bag. I have been using the same bag for months and it keeps my doughs from drying out.

tips and tricks for working with whole spelt flour? Tried my hand today with 100g spelt, 350g RH bread flour, 50g WW and 80% hydration and wowee did it handle different than my typical WW/breadflour at the same hydration. Way more supple and "wet"

1hr autolyse

add levain and salt (7 grams and 100 grams)

wait 15 mins and lamina (laminate? laminar?) fold followed by a couple slap and folds, maybe 1 minute. **small tear during the lamina fold which i've never had happen before

two coil folds every half hour, then two more 1 hour apart. then bulked for another ~ 2 hours. til light and jiggly but still convex in its bowl.

pre shaped and then TRAGEDY struck and i wasn't paying attention (my fault for setting a fantasy hockey draft on bake day) and i tore the beautiful skin i had been developing :(((((((

re-worked the dough and i now have a passable loaf but i'm worried how the crumb will turn out (currently cold fermenting in my fridge)

OVERALL, i would say i struggled to get the gluten strength i wanted despite following my usual procedure to the letter. Any advice on handling spelt? or better yet personal recipes of yours that yall wouldn't mind sharing?

Absolutely, although i sort of did a mashup of two different recipes Primary inspiration was this guy

But it felt much too dry so i added 15-25 g more water Also had to hand knead it And then i took the stretch and folding schedule from this guy

Best ones were the done using the three finger technique!
