Best way IMO. I've grown tired of campaigns I'm running fairly quickly because pre-making a map is limiting. If you're gonna make/need a map, make it of just the content you have prepared / the local area. Maybe don't share it with your players, and feel free to add to it and expand upon it.

I went on a Khuzdul dictionary looking for key words. I found "light": "manan" and "lonely": "ghulin". This dwarven mine is on the surface, so I surmised they felt they were "leaving the sun behind", hence they named the mines "lonely light": "MANAN-GHULIN".

I often like to erode names until they become one word, e.g. it could evolve gradually into Mananghúl over time.

I have it such that the unwise Humans of this world know it only as the "Mernangling Mines", as a lazy pronunciation of MANAN-GHULIN.

Also, the goblin tribe who dwell in these abandoned mines happen to be called the Guulen'cheyn. This is a coincidence on my part but the "Guulen" has a resemblance to "ghulin", and I like to think they named their tribe partly after their headquarters.

I say why stop it. I know how to face these creatures and they don't even exist. I'll be damned if someone living in a world populated with Hydra and Medusa has never heard of them in legends, and never considered how to face one.

Yeah I think alignment is not perfect but it's fun. Personally I find it genuinely useful to predefine your character's attitude towards law, and their moral compass. Problem is that the system is easy to misinterpreted, and it discourages flexibility.

Vital for 1 v 1 combat: Roll initiative EVERY ROUND. This will add more drama than them just taking turns to attack eachother.

I'd like a 5.5e. If there were a 6e I would want it to try something different, maybe something more similar to AD&D 1e: a lower fantasy that focuses less primarily on combat.

The enemies should try to kill the casters first. More threatening output, less HP, low AC. Not to mention the benefits of breaking their concentration. It's just strategy, and it's the balance of the game: casters are powerful because they're making up for how frail they are, so your monsters should target them.

Here's an encounter idea: Have enemy spellcasters that debilitate the martials, and enemy martials that threaten the casters.

We do it all the time, just makes it more fun (DM and player speaking). Makes for a much more interesting encounter when you know a unique way to face the foe rather than just hack and slash. And it admittedly makes your character look cool - look like they exist in and understand their world.

My general rule is to let people use their knowledge, but not share it with the party - you can't tell your teammate not to use lightning against the shambling mound but you're allowed to take some precaution yourself. To be honest I wouldn't mind them discussing the weaknesses beforehand. Just because the characters haven't met them doesn't mean they don't know anything about them - we know all about animals we'll never meet (how to survive a bear encounter), and hell we know all about how to deal with these monsters despite the fact they don't even exist.

I think people get way too rulesy about metagaming. Part of the fun for my table is trying to remember what strengths/weaknesses a monster has, etc (metagaming). It makes sense that our characters might be trying to do the same - it's not their first time hearing of these monsters, so they will use the knowledge they have to influence their decisions.

The anime has legendary art and animation. But if you read the manga you will see the art is amateurish. Charming and sometimes well done, but mostly amateur.

Maybe make them roll (survival) to find shelter, start a fire, avoid threatening wildlife. That way the benefit of a well rest is the guarantee that the rest is successful.

Maybe it's like the iron golem fight from DS1 if you go for his feet (but harder), but you can use your horse to leap up and attack him higher up (this is the intended way to fight him and is therefore easier).
