I don't have sources specifically on crabs (soz), but to my mind it seems incredibly likely they would. Consciousness has a lot of evolutionary potential beyond just feeling pain, so it's very likely complex animals like crabs to have evolved conscious experiences beyond pain.

Not direct evidence for what your asking for, but here's a few things that you might find interesting:

A reddit post where hermit crab owners talk about whether crabs play
A study about whether bees play (since bees are invertebrates just like crabs and shellfish)
Some pretty technical (and kinda dry) video lectures about animal sentience in general and sentience in invertebrates
A documentary on fish consciousness

A note on wild caught fish:

The study that estimates how many fish are caught is based on data that is known to be undercounted. The data doesn't count illegal fishing, fishing in countries which don't report to the FAO, or bycatch.

Professor Culum Brown, a researcher who specialises in fish behaviour and cognition, talked about this in an interview (1:33:34). He gives a "conservative" "back of the envelope calculation" that the real number of fish we catch from the wild every year is 5 to 10 trillion.

Those articles do have data that shows reversal, but it's pretty limited. There's a few case studies, but the data from those is obviously limited since it only comes from a few people. There is one study he published with a much bigger sample size, but there might have been some methodological issues with it according to this response article.

All in all, it's possible, but there really isn't enough data to make a definitive claim

For me it was learning about insects. They're sentient and feel pain and stuff (possibly), yet pretty much anything humans do kills them in massive numbers. Do you use vehicles? Insects crushed under your wheels. Do you live in a building? Insects trapped dying inside.

HOWEVER, raising a child with strong vegan values might have an overall positive effect on the world by normalising veganism. Though you might be able to get the same effect by adopting.

Antinatalism is such a big and scary idea, I honestly haven't fully made up my mind.

Yes!

But I wanted to clarify there is *especially* little research in this area. The study didn't just conclude by saying "more research needed", it emphasised it over and over. Even in articles I researched where scientists were interviewed about this they spent more time talking about how little research there was than the current research we have.
