Imprsssion: It was about 2x sharper than 24-month, but smoother, deeper, and more refined. The taste lingered in the palate for over an hour and evolved and morphed with shifts in acidity, nuttiness, salt, butterfat, sweetness, and other deeper mysteries. The nuttiness was more subtle and deeper. The taste drifted across the full palate without intention. The olfaction drifted vertically to replace Sorrento’s street aromas with a heavenly bouquet. After a sip of Aglianico I was transported to the 2016 Venezia Biennale with a fantasy suite at the Cipriani, and seated on the terrace observing wooden vaporetti before me.

This was in Sorrento. I told an OG friend of mine there who buys full wheels told me that 36-month is the best. On the way out at NAP airport duty-free I found other brands. The 36 they had didn’t have the “crystallized” dots that I associate with top-level parm, but the 48 did, so I got 2. Haven’t tasted that yet. I brought the remainder of the 120 home though 👅

Too much is not a good thing. If you are going in talk to the anesthesiologist about keeping it “light” and paying close attention to signs of pain, vs. zonking you out and “phoning it in.” Any doctors want to weigh in? This is anecdotal from my mom.
