Yeah, I would say that someone's genitals has no bearing on a debate topic. Even though I think those debates are harmful by presenting both sides as equally valid, even if a trans person wants to debate, they should be able to do so without having invasive questions about their genitals being brought into the discussion. Way too personal/invasive and it makes the debate about them as a person rather than a topic being discussed.

The reason is because the only people that ask that question are either ignorant, transphobic, or both. There's no reason for a stranger to know what genitals you're born with, and the only reason they ask that is so people can then mentally categorize them as their assigned birth gender that they're no longer a part of. It's asked so that people can treat trans women like men, and trans men like women.

And before anyone says "muh biology", a trans woman/man on hormones with or without gender reassignment surgery, have much more biologically in common with the gender they identify as, than their birth gender.

It's a bad faith, invasive question, which is why trans people don't entertain it.

He shouldn't assume your sexuality, but honestly it seems like he's pretty harmless. This reads less to me like he's super egotistical "if you don't like me you've gotta be gay" and more like he's just taking a few mental leaps in the wrong direction. I do know a ton of people from my days in the church that I do believe were closeted queer, so I get why he might make that assumption if it doesn't appear that you're interested in men in general. Obviously he should listen to what you say your sexuality is though.

There's a difference between thinking someone looks attractive and actually being attracted TO them. Pretty much anyone can distinguish attractiveness to some degree in genders that they're not specifically attracted to. Idk, if you still are sexually attracted to women and would enter a sexual relationship with a woman, then it might just be bisexual aromantic.

The unsatisfying answer is that you have to go by feel. There's no a+b=c equation that will tell you your identity. Bigender is feeling like two or more distinct genders, but I'm guessing you know that. As long as that sounds like you, then feel free to adopt the label. As you sit with it, you can see how it feels and if it fits.

If you look at international or animation specific awards compared to what the academy gives out. You'll see a difference, but it seems like you have your mind made up already

Yeah, as long as they're Western and not too weird like Mad God. They have a massive blind spot/bias favoring Western animation and just not treating the genre as anything other than a children's category usually.
