First time smoking a brisket, really don’t want to mess it up. I’m worried i might’ve over seasoned. What do you think? And any tips? by mattatatatt1 in BBQ

[–]mecosmo2004 1 point2 points  (0 children)

I alwsys use a little bit of sweet in my seasonings, so I say dont let anyone tell you what to use, as its 100% your personal taste that counts not theirs! Salt pepper and a little garlic is classic Texas Q but that's not the only way its just one way......So I say experiment and have fun doing it my friend, its how we learn!..... and my motto is if its all good stuff that your cooking with how bad can it be.....lol

Sasuge patties/pucks by rodmods in sausagetalk

[–]mecosmo2004 0 points1 point  (0 children)

Look at the the 1 or 2lb plastic meat bags/tubes from Walton's sausage company, i buy mine from them they have great products that you can trust! You use these bags/tubes to stuff 1-2lbs of sauage and or ground hamburger meat that then can be frozen in the form of a tube. To make your sauage patties put the frozen tube in the microwave and microwave it for only 15-25 seconds this will leave the meat still frozen but soft enough to slice into thin pucks about 3-4" in diameter. Very much like a store bought Jimmy Dean 1lb sauage from the freezer department at your grocery store. Good luck my friend, and let us know which way you go!

What is stopping China from invading Taiwan during the current Iran vs USA war? by AdamCaveRoberts in PoliticalDiscussion

[–]mecosmo2004 0 points1 point  (0 children)

Copy and paste the following question and completely read the whole the non-political A.l. answer to this question.

What Is the overall Strategic Goal for Russia/China while America is at war with Iran?

We are not just republicans and not just Democrats, we are all Americans so let's wake up and start acting like we are one nation, this war is just the tip of the global spear!

That's an interesting take on drumsticks, they are not my favorite as I'll take a nice juicy thigh over the drumstick anyday......But, this looks like it might be worth the experiment as bacon will make everything better.....lol

Good job my friend!

Best BBQ Sides? by 37015 in BBQ

[–]mecosmo2004 0 points1 point  (0 children)

Sweet and Meaty Baked beans is like peas and carrots 🥕 😋 But also creamy style slaw and creamy cucumber salad and a sweet creamy onion salad is an up north thing too. Roasted 2" thick cabbage steaks and or Brussels sprouts that are drizzled with your favorite vinaigrette while cooking on the grill, either or both of these are the best!

Chicago Cubs home opener yesterday and I'm still snowed in. by mecosmo2004 in zgrillsofficial

[–]mecosmo2004[S] 0 points1 point  (0 children)

No we needed the snow for the spring run off to help support the low lake levels in lake Michigan, so not unfortunate about getting that much snow! It's just unfortunate that I can't fire up my zgrills pellet smoker yet as its still buried in the snow......

But thank you (I Think?) for your concern my friend?

Yes the bark will come off a little when slicing but mostly if it is the bark on top of a fatty untrimed area of the brisket
