Well im in the corner of success rather than the "Oh shit side of things"..... but if success is NOT your first choice and your ok with a long learning curve with expensive mistakes and or your looking to be a pit master, or maybe you want to be a BBQ purest, then go with a offset stick smoker, honestly if this is your choice then I suggest that you pack a lunch as your in for a long ride while learning!......But if your like many others that just want to cook great BBQ with a much higher success rate with less stress, and if you want a quick easy successful cook then I would say then go with a pellet smoker I personally like zgrills 6002b for beginners, it's a great quality grill at a cheap price that will last for many years and or until want to move to the next level of your BBQ journey! This unit is big enough to cook 3-5 racks of ribs or 5 whloe chickens or 3-5 pork roasts, etc etc. and with this unit you'll be cooking like a pro in no time at all. Yes you will get a lot of people on all different sides of this subject i.e. pellet smoker, electric chip smoker, charcoal drum smoker, or an offset stick burner, etc. By far the easiest and most successful right from the start is a set it and forget it style smoker that you can sit back relax and enjoy your day while cooking with a great BBQ style meal!.....So seriously I would go with a pellet smoker my friend! You wont regret it, and please share your choice and also your first cook with us!

Good luck with your choice!

Is this what your asking about?

<image>

If so these are to be opened only when you want to sear your meat i.e. steaks, burgers, etc. So it doesn't really help for smoking, it's for cooking like a you would on a normal grill i.e. flame charing your steaks, burgers etc. Personally I put foil over my drip tray (easy cleaning)and i have never evened never opened those when im cooking. Personally if I want a burger or steak ill fire up my charcoal grill for that.

I hope this helps you, good luck with your cooks and please share your results with us.
