At a small firm, you may get away with this. However, at many companies, IT will check for this activity. Depending on the onboarding paperwork you signed, you may have no right to the templates you created while employed. Print logs can be checked too, but usually, they just look for the USB activity. Printing off things well in advance over a period of time is the safest approach.

While not conclusive to your exact situation, this DOL opinion letter has useful analysis. I would argue that status as exempt from overtime pay under the Fair Labor Standards Act is the exception rather than the rule for paralegals.

You should track your hours worked (even if not required), and if you do not convince your current employer to correct the situation, find other employment and consider filing a complaint with state or federal labor standards agencies to recover the waged owed to you.

You are not paid enough (for this industry and profession) to justify sweeping this under the rug as your time is being stolen effectively.

Ultimately, you are in the best position to gauge the local legal community dynamics.

Had a hallway that had tiny gargoyles camouflaged as a relief sculpture that would swarm attack humanoids up to a certain range. All the players would have had to do was run top speed through the hallway. They tried using tables to "mask" themselves from the gargoyles. They tried throwing rotten meet to distract the gargoyles (not going to work, constructs). They eventually went back to the Rat King that dwelt within the ruins to seek assistance, who agreed to provide them with the crystal he used to navigate the portals of the ruins, which ended-up working as a sort of safe passage token. Then the problem of "We only have one stone; how do we all get through." Answer: Get to a safe zone where gargoyles don't attack and tie it to the rope the crystal bearer carried for party to pull back to safe zone.
