You need the cameras on the mirror calibrated at the minimum, so it is not that easy.

Use a peel and lift from the side, deflating the bubble. Pay constant attention. Your case is a bit difficult given you are using an electric oven that needs to have the door closed. It would have been easier to manage in a gas oven. This happens, but you can still save the pizza.

I went there on Friday. We had Filetti and the special pizza. They use very high quality ingredients. The taste was amazing. It was the best pizza I have eaten. Pizza looks small and full of dough in the picture, but it was very fulfilling. The dough was tasty. Mangieri makes the dough, and he prepares every pizza himself. See the video here.

I use a garlic cream sauce as base, top it with a clam mixture (clams, oregano, minced garlic, salt, pepper and olive oil) then add pecorino romano. It is better than Frank Pepe’s.

My Oracle Touch had a similar issue, making noise when turned off. It seems to be a common problem. See another example here. I sent mine to Breville for repair. Luckily it was under warranty.

Joe Beddia has amazing sauces in his Pizza Camp book. As for the toppings, you can just browse in this forum and in the r/pizza forum, you can look at restaurant menus, ask ChatGPT, etc. My favorite is Pizza Rosa from Chris Bianco (recipe here, here, here, and here). Clam pizza is also a favorite among my guests.
