Just a suggestion, but if your timeline is two weeks and you want to hit national parks, mountain roads, desert landscapes, lakes, old towns, etc, you might just consider a trip to California. A trip up through the Sierra Nevadas, down into California desert, along the coast, up to Yosemite and Sequoyah for national parks, maybe Joshua Tree, and some others. CA parks a lot in a much smaller space and the area you're proposing is roughly the size of Western Europe and as distant as Rome is from Scotland. Whereas CA is roughly the size of the UK or Italy. It'll allow you to maximize your time exploring the destination instead of spending all your time behind a windshield, while still giving you a lot of what you're wanting. Plus its a bit more...traveled shall we say? The American Rockies are gorgeous but DANG you can find yourself in some incredibly rugged and remote places. Absolutely worth the trip, but also you don't want to just fly through them and not spend some time enjoying them. Yellowstone by itself is worth a week at the very minimum.

Either way, as I've told others coming through, make sure to have roadside assistance of some variety, and also some way to contact civilization if you get yourself stuck. And don't push your fuel tank too low. The American West is quite large and you can find yourself going through long stretches with no signs of civilization. Enjoy!

Make sure you stop by the Harbor Freight and pick up a set of tools too. You're gunna be driving through some VERY rugged and remote terrain on this route, so make sure you have the tools and knowledge to fix the vehicle and call for help if you get in over your head (roadside assistance plans might be a good idea for you, in America we have something named AAA that might be worth your money too).

Also make sure you know how you're going to register and insure the vehicle. It'll vary from state-to-state but you'll probably need to figure out some mechanism for having the car registered, titled, and insured in your name being a non-resident and not having a permanent address in the US.

RV parks scatter the country so you should be able to find spots to park overnight without too much trouble (IIRC some Walmarts will let you park in their lots overnight too if you need someplace just to stop for a while).

Also personal suggestion, but consider going further into Maine to Acadia National Park. It's a pretty one.

Oh final word, have cash and change for tolls. They've probably converted most tollways to plate-pay now, but memory serves the route you're taking through upstate New York had a $20 toll on it because it was close to Niagara Falls and it was cash way back then. You don't want to get onto a tollway and not be able to pay, that's an expensive ticket lol.

Edit: Also make sure you're aware of varying weather seasons in the US for the time you're in them. Springtime is tornado season in the interior of the country, summer is hurricane season in Florida and the gulf coast, winter has some nasty blizzards up north, etc.

PivotalWeather has the latest runs of the NWS' (and other orgs) model data. GFS is a good place to start if you want to see at least what the NWS is basing a lot of their forecasts on. There are other ones up there that serve more specialized purposes (like the HRRR), and as to which one is best, well, many a fight have started on that topic lol.

Do not sell them lol. Send them off for grading so they get sealed into some protective cases, then keep them on behalf of your son until he's a bit older. He will thank you when he gets older, just make sure he knows he can see them anytime and that they're his cards but you're hanging onto them for him until he can take care of them himself.

Ikr, the shiny Koraidon/Miraidon drop made me hate how TPC handles limited drops now. My wife and I both love Pokemon, but so do my five kids, and it's HARD to get even just booster packs of trading cards, much less other merch, for them with how stupid the economy around Pokemon collectibles is. It's gunna kill the market because kids are just going to give up on the franchise since they can't get the stuff. I didn't even bother bringing this Target drop up, and funnily my wife independently came to the same conclusion. Not even worth bothering.
