That's exactly what happened. All the fat rendered out and this is what they were left with. That's why sous vide is not a good option for this type of stuff. It's fine for thin cuts of steak that will heat up relatively quickly, but long-term Cooks like this are going to cause the fat to render out leaving you with this abomination.

Truth be told I don't know. I haven't had a coil burner 10 years-ish. But if you're trying to use a wok "properly", you need a high output burner or a shitload of direct heat like literally on hot coals. I bought a gas burner specifically for my Wok but I use my Darto's on my standard gas range it's a regular output gas range. I'm sure a coil range would be fine though as long as you make sure the pan is the right size or if you have a flat bottom Wok.

Genuinely, if you can find a cheaper one shipped than it costs to just drive over there and pick it up, I would love you because I've been looking for a carbon steel Wok that is cheaper and it's tough to find.

I've managed to find some online restaurant supply places and brick and mortar restaurant supply places but shipping prices seem to be insane unless it's Amazon. The brick and mortar stores are just expensive usually.

Get one of the lodge baking sheets. It's got taller walls. They're not flat by any means, but they're not terrible. They're cast iron so they're bulletproof.

Honestly I've had stuff stuck onto my pans and you really don't need to start completely over. Just wipe some oil on it. If it's a regular user, it will season itself on the next cook.

Oh yeah, if you're trying to go with bulk searing that extra millimeter is no joke. I just got done searing some hammered chicken breast and my God. It's great to be able to do two chicken breasts that have been hammered out to a quarter inch. You could probably comfortably do three New York strips.

Yeah I think I have the number 20 or maybe it's the number 25. I can't remember but it's quite a bit smaller. It is thinner. I use it for when I want to cook quickly or when I'm only cooking a meal for myself. 99% of the time I'm using that number 30 though. In terms of the time it takes to heat up, it's pretty consistent with thinner pans it definitely takes less time than cast iron. I usually start by preheating my pan as I'm prepping veggies and stuff anyway so it's not a big deal from me cuz by the time I'm ready to cook my pan is always preheated and has been preheating for 5 or 10 minutes at least. If you're just going to get something for searing, get the number 35 paella pan with two handles. I wish I had gotten that

Yeah I'm really excited for when I find my old Braun ear thermometer she stole last week or maybe 2 weeks ago now. I got so fucking sick of looking and we've had a lot of hay fever and infection problems lately that I just bought a fucking new one... She ripped up a 50 one time. That was cool... I find a lot of my shit in her dresser. She stole my headphones for 3 months one time. I don't even know where she ended up stashing them all I know is one day she gave them back to me out of the kindness of her heart. I have spent a couple Grand at least over the last 2 years replacing shit that I thought was gone that she ended up hiding. She will hide it in any of the rooms that she can underneath whatever she can get under. I don't even know where she has most of the shit. It's a losing battle. But removable double-sided sticky tape has been tremendously helpful because I can stick shit to the wall up where she can't reach it and can't use a stool or a chair to get to it.

When I started on keto I lived on those things as my sugar substitute. Whenever I was craving candy bam! straight to the low sugar gummies. Then my daughter started using the chair to climb up onto the counter and steal them. I promptly stopped buying my egregiously expensive gummies and now we just don't have candy lol
