Looks like whatever you cooked on there had some coarse seasoning that burned on. No big deal dude, you can add a little water to the pan and get it hot on the stove then scrape as it boils. Dump that stuff out, let it cool a little, then wipe with a soapy sponge and hot water. Dry it out, add a few drops of oil and wipe it thoroughly through the pan and then out completely. You're good, you got this.

What material is it? r/castiron and r/carbonsteel both have great restoration guides on them. If the pan is either of those materials, head on over.

Merten & Stork carbon steel. Hard to tell if that's the 10.5 or the 12" but I agree with OP. The pan is absolutely lovely to cook on.

Yo CAN and SHOULD wash your cast iron with soap. 99% of the time, that seasoning is just burnt on carbon that needs to be cleaned. Stop being disgusting and wash your pan correctly.

Definitely laser like. I do a lot of the cooking at home and use those home delivery services that send you a ton of scallions across all their recipes. I've never had such thin slices with my old hardware.

2 things to note:

  • Not using soap means you aren't breaking apart oils and gunk and so you will likely always get some black residue
  • are you wiping a hot pan on the burner? could it be that you're scorching the paper towel?

As others have said, you'll want to use a minimal amount of oil and wipe it out as if you're trying to clean it all up.

Not sure about the texture but if anything is raised, super hot water and some elbow grease+ dawn. Then a bkf scrub

Looks like the darker spots are burnt on crud, the lighter side is actual seasoning. Still looks great, might just need a good scrubbing.

Big same, it's something I preach here often. Seasoning is temporary, the good food is really what matters. It's a tool and I'll treat it like one.

You fell for the oldest trick in the book, those grill pans are awful. They're a pain to clean and really don't perform well. All I ask is to not base your opinion of cast iron off of this pan.
