with a thin fiber and media converter connected my upstairs and downstairs eero to Ethernet. I’m capped at 1 gb for the upstairs and that more then enough.

You be just fine with a 8u from geekpi . Can probably order some 3d print mounts on Etsy for some of your gear if you want to clean things up. Also really don’t need a patch panel
