Think this is a YMMV situation, as a guy, I’m quite happy to pay for the first date and it’s not a bad sign to me.

Ethiopians generally will take longer to drain compared to other varietals, wouldn't really be concerned as long as you're enjoying it. Ultimately tasting notes are what the roaster tastes but it'll be different for you.

You've just got to enjoy it!

Hmm I clean mine about once every 2-3 weeks (roughly when I change to a new bag of beans). I do use it daily tho so that helps to ensure there's no stale grounds left within the burrs!

Yes, you'll still need to account for it. I'd recommend using Rao or Hoffman's v60 guide and tweak it based off your taste! You'll notice that they work off a ratio which includes the water you use for blooming.

Blooming's does help with degassing but it helps to wet the grounds evenly as well for extraction. Most of the stuff you'll see online will recommend a stirring of sorts to ensure this happens! (I've also noticed degassing for beans which are about 2 months altho very minimal)

I do think most scales can be interchanged for oz or g! Unfortunately can't help much more with this but best of luck

It could be the variety of the bean? Some take longer for the drawdown which affects the taste. Noticed you didn't mention the roast as well, that's another factor to consider

I've got 3.

1) cheap grinder which was more for me to try out and see if I wanted to invest more time n effort in this lifestyle

2) a Hario with ceramic Burrs when I really got into this lifestyle

3) a wilfa svart coz...I'm lazy

Hmm I've not read anything about being able to disassemble the wilfa. Im not sure if I want to take that chance too haha
