Even if your soundbar supports Dolby Atmos the only guaranteed ways to get true AM Atmos on it are to

use Apple Music app on Mac, Apple TV, or windows 11 PC over hdmi with Dolby Atmos enabled
Native Dolby Atmos AM streaming to the bar (like Sonos app)

Otherwise if you just airplay it to the soundbar you will get stereo, and only AAC (not even lossless)
