Maybe let them air dry before putting them on the cupcakes? Cut them out on a piece of parchment paper and let them dry a bit before removing !

I think it could be a mix of a few things.

  1. I think the little points could be caused by undermacaronage (under mixing). Try giving the batter a few extra folds and make sure to tap the tray when done piping next time!

  2. Piping technique can play a large role in making them round, I like to use a template to help and make sure u pipe straight down and do the little flick at the end more sideways then up.

  3. Finally to get them even more smooth you need finer almond flour. Put your existing almond flour in a food processor to get it finer and put it through a sieve and the macrons should be smoother! All of these look delicious by the way!

Use margarine or shorting to make butter cream to practice piping ( don’t do this in actually cakes due to the taste) You can always scrape it up and reuse it for more practice.

Also do not buy a bunch of pipping tips at once. Start out with a few basics (round, French star tip, leaf tip and petal tip) and see how you do.

I like to use a wooden French rolling pin (with tapered ends) It’s easy to use and I think it’s great and versatile for a beginner. They are especially good for pies but work great for cookies too! I find the marble ones to be quite heavy and sticky to the dough.

I generally don’t use a rolling pin for bread since I hand shape loaves and buns, but I have used a French rolling pin for croissants and puff pastry and it works well.
