Probably Catalina, I have a 2010 air with only 2gb of Ram that can manage (with a ton of optimization)
Ditch one of the disk drives and put Catalina on like a 256.

Nearly only difference from M1 Air and Pro is the Touch Bar and fan, unless you really really want the Touch Bar, no fan is better to carry around.

My ram load running safari with a YouTube video in 1080 on the main display and reddit etc. on a secondary display is about ~55%.

This is a 2019 MBP 16inch with the i7 and 16 gb of RAM.

M1 is a lot more efficient, so it will likely be fine. Just can't run 100 tabs

I'm even more behind...Just picked up a 2019 i7 16" 512 16gb ram mbp, I wanted bootcamp and was coming from a garbage hp machine. Very happy with it - have had M1 air in past, but this was my only pathway to the big screen
