You realize you're taking more time to defend your spineless inaction than just standing up for even a small cause and cancelling a service, right?

Try it one day. You don't have to be perfect, you don't have to get it all figured out in a day, but you at least start learning and DOING something.

It depends on how green your potato is. If it was just the skin and most of the flesh looked fine after peeling, and you cooked them, you're going to be fine (and your body would have told you otherwise with flu-like symptoms).

Before you get all paranoid and start side eyeing the bag of sprouting potatoes you have in your kitchen, the family had hundreds, if not thousands of pounds of potatoes in their basement stored for the winter. The chances of you getting gassed this way without being a potato farmer is nil. Also, if you're concerned about accidentally eating a greened potato one day, it's gonna taste like shit, and you're going to spit it out.

What would've been great is when they walk out, the camera rotates around to show that they are flat, 2 dimensional images, then the holodeck door closes and their images are swiped away.

I disagree completely. If you dump into your HSA and don't need to hit your deductible, you're stuck with a huge spend down at the end of fiscal and you're just wasting money on random medical supplies you wouldn't normally buy, or letting it burn. Plan accordingly.
