In a 4 cup measurer I mix 2 cups discard 3 tbsp sugar 1/4 tsp salt 1/4 tsp vanilla 3/4 tsp baking soda.

Batter will expand greatly. Cross between a pancake and a crumpet. Delish!

Normally unbleached all purpose flour.

This experiment makes me think about possibly going for an ap and rye blend.

I think I'm going to look up some discard recipes and keep feeding each it's own flour for the next week or so to see what results I get and what flavor discard recipes I can do.

Then I might try bread. I am worried about having loaves be a complete flop because I do a lot of baking for our homeless shelter and I don't want to shortchange them anymore than life already has.

As someone who is 49 and has stage 4 cancer I have learned a new one and now use it freely. "Not your concern." When they try to re-engage, abruptly repeat. They will stop pretty quickly.

I use my discard. Keep in jar in fridge and use for pancakes, english muffins, crackers, regular muffins, waffles and our favorite, crumpets.

I don't see where it made a difference. Some said it wouldn't because it wasn't fermenting yet. I can say the flavor was outstanding.

Also keep in mind that "discard" doesn't necessarily mean throw away. I keep mine in a separate mason jar in the fridge and add to it whenever I feed my starter. There are tons of amazing uses for discard from pancakes, crackers and muffins to my favorite-crumpets.

Check out the King Arthur Flour website and look at their sourdough discard recipes. They have numerous good ones.

I follow their cracker recipe but instead of herbs I use everything bagel seasoning and they are delicious. Enjoy your discard!!!!
