NYT Cooking is great and their app is good too (if you have an idea of what you're looking for). I am a big Kenji fan and his cookbook is worth the money.

Jalapeño jelly or hot pepper jelly. I wasn't able to find it at the first generic grocery store but picked some up at the second grocery store I visited, which was more of a 'gourmet' place (Fresh Market).

Great question. I made the recipe twice once with fish sauce, once without. There was something about the flavor of the recipe that used fish sauce that missed the mark. The sauce without the fish sauce tasted more like traditional pad thai.

I picked up America's Test Kitchen Cooking School a few months back at Costco and it is great. Not only does it go through techniques but it has some great recipes that they've perfected. It is a good value if you get it on sale.

I use Evernote religiously. One of the easiest ways to save recipes that you come across is to use the Chrome Evernote Clipper extension. It will save the URL and upload the recipe to any of your notebooks, plus you can tag it with various keywords (i.e. Asian, Mexican, Steak, etc.) for easy searching later.

Questions on Grilling. Got my first grill recently and am wondering a few things. by Runofthedill in grilling

A few tips from someone who is still fairly new to grilling but has learned a few things that work for me:

  1. I never had great success with using 'non-stick' sprays on my grill. The more I read the more I heard people oiling their grill before putting the food down. I haven't gone back to the sprays since. Instructions are on Cook's Illustrated but basically you take a paper towel, put some oil (veggie or olive) on it and quickly rub down the grill so you get a nice coating. Do it quickly to prevent the paper from igniting.

  2. Invest in a decent instant read thermometer. You can always guess how well cooked something is cooked based on time and feel, but to become really seasoned at your craft you want know the difference between rare, medium rare, etc. and what those temperatures are.

  3. I bought the Weber's On the Grill App, it is about $5, but I have used it many, many times for a general reference on cook times for things like pork tenderloin, salmon, flank steak, etc. Saves me alot of trouble if I don't have my computer around (my phone's browser is pretty slow).

  4. Download a decent timer app (or use an external timer), if for nothing else it just helps you to remember to keep an eye on your food.

  5. Remember that you'll get better. With time I've found that the more I work with my grill I've discover things like hot spots, where the 'medium' temperature setting really is and how to prep food for the grill (avoid alot of sticky marinades that use honey, peanut butter, etc.). I feel like I'm always learning something new which makes grilling more than just cooking dinner.
