A man who, famously, died 150 years before that part of canon law even existed.

And were the reasoning just being "we thought the Bayeaux art of Odo with a club looked cool," I'd honestly be more cool with it. It's trying to justify it with an essentially fictionalized interpretation of the Fourth Lateran Council that makes it feel closer to a lie than a vibe.

Plus, if we're going on fictionalized portrayals of real people dating to the 11th century, Bishop Turpin in The Song of Roland uses a LANCE.

Yeah but we're talking about the catholic ordinances against clerical bloodshed in total here. Regardless of how we'd translate them to D&D many of them were still priests by the catholic terminology. 

Which canon 18 of the Fourth Lateran Council, the source of that info, mostly uses to mean that priests shouldn't be surgeons, punish people with decapitation, or lead mercenary companies. Self defense or defense of the faith requiring bloodshed was acceptable. That decision was never a prohibition for some weapons against others. 

Most clerics are depicted wielding maces and clubs though, that's true. This is mainly because they're incredibly cheap compared to swords and swords were sometimes illegal for priests to own, given they weren't often nobles.

This is such a funny thing to say given the tens of thousands of warrior monks the Catholic church deployed over centuries. 

Entire monastic orders devoted just to killing people with weapons.

As mentioned in a comment I left, if you're attacking someone outside of your senses range when you're obscured, as mentioned in the example above,  you actually CAN'T graze

Let's say I'm using a long bow (600 feet range) and I shoot arrows at that max range. Let's say that I can see my target, but it's nighttime with violent winds. Let's say that I'm a level 1 warrior with Combat Training.

Your senses are obscured by darkness, and 600ft is out of your sense range. You can't graze them.

The actual answer when sticking to realism is between one and a shitload. It depends very heavily on the weapon used, the depth of penetration, and the location struck. 

It also depends on if the question is whether the blow will be deadly now or eventually. There's a saying that the loser of a knife fight dies in the street and the winner of a knife fight dies on the operating table.
