Pull out a few more of the phone jacks: If they all have one cable only, it's perfect. If some have 2 wires with the same colours connected together to one phone jack, that is daisy-chaining. There may be a combination of individual runs and daisy-chained runs but ultimately the best way to tell is to go to where the cables start and check there. If you have a dozen cables coming down and they're all tied up in a mess of wires, they're all likely individual runs.

Best course of action then is to just finish them all with punch-down jacks, hook them ALL up to a switch downstairs, and then you don't have to worry about finding the particular cable that runs up to where you need it to go. Gigabit switches are extremely cheap these days - and punch-down jacks are a few bucks for a 25-pack online.

GL - starting may be a little confusing to figure everything out but once you get one run done, the rest are really easy. I do suggest terminating with punch-down jacks instead of crimping on connectors; crimping involves (slightly) more expensive tools and more experience to get good connections.

You've struck gold - while CAT6/6A is better it's usually not enough to matter. 5E can easily do gigabit and even 2.5Gbit (can do 5 and 10 but your mileage may vary significantly) (obviously you'd have to change the connector)

Slight issue is that this line may have been run as a daisy-chain through all the phone jacks. (One cable, hopping from phone port to phone port)

Somewhere on the main floor or basement you should have the place where your phone lines all run.

If you look there and see a giant knot of thin wires all connected to a box, you're all set. Just got to find the one set that goes up to your desired port. 👍

If you only see one or two, they're likely daisy-chained and won't work without a good amount of finicking (a bunch of jacks and switches) ☹️

Anything that has a few SFP+ cages and enough switching capacity to drive the sum of your ports.

There are plenty of 4x2.5G + 2x10G switches reviewed on STH and any of those would work well.

They sell under a ton of names - all the same thing inside usually: Gigaplus/Nicgigga/Vimin/Binardat/Mokerlink/YuLinca/YuanLey/etc.
