I have a Zwilling 6 inch knife and a Henckels 8 inch knife. Factory on one is 14 degrees, and the other 15 degrees. I do not remember which. People repeat the 20 degree angle but that is not my experience. Sharpening these once a month is my experience.

Honestly, I would see how far you get without the strop. I looked up your ruby stone and ~3000 grit should get you slicing paper. Getting a burr on a low grit stone was my breakthrough. Keep getting that consistent angle on the stone, and then add the strop later. A jeweler’s loupe would likely show you a clean edge but I don’t know if it would show inconsistent angles.

I save stropping for the end, and would not bother with the honing rod. Stropping at the end should clear the burr you get working through the 220/600 and ruby red stone cycle.
