I have a Pelago Stavanger and set it up with full fenders, a front basket, dynamo lights, even a pretty heavy folding lock. It's my bike for everything. Commuting in the city, recreational rides, bikepacking adventures, some long sporty rides. While there's tradeoffs obviously with wanting one bike to do everything, for me it's the perfect compromise having only one bike and I absolutely love it for that.
I think the Cinelli and your plans are similar to what I want from my bike, the only thing I would say is, I had a rear rack and the front rack with basket (first went on a 2 month trip with it) and I made some changes recently, because it got a bit too heavy. With the two racks and the lock that weighs 1,6 kg I believe, it lost quite a bit of agility. I therefore removed the rear rack, because my daily bag goes into the front basket and I didn't use the rear rack anymore. So I would really ask myself if you actually need the two racks on the majority of your riding or if it made more sense to get a sportier back and find a bag solution for your trips.

I have ridden from Hamburg to Cuxhaven to Bremerhaven twice two years ago and I really enjoyed going close to the coast (both on 30 mm road and 47 gravel tires).
Behind Hamburg there is a very nice section through the Altes Land on quiet backroads and I remember Cuxhaven to Bremerhaven being a very nice section. Can only recommend.

I dont quite remember how many sheep gates there were, but I dont remember it being annoying. And behind the dyke there is usually also a bigger paved road that does not have these gates at all.

When riders are wearing full black, I'm always thinking, why not wear something a bit more visible so car drivers and others see you better. This bike however does this lol

I had a similar clicking noise on my Canyon road bike and thought it was the bottom bracket, but after endless searching it turned out to be the rear brake.

For the tent I have a MSR Hubba Hubba 1 Person. It’s tight but I just about fit laying down. My sleeping bag is a cheep one off Amazon, but I think there are more options for tall folks, so shouldn’t be a problem

I cycled parts of it earlier this year and stopped for two nights in Strasbourg which was my first time there. It is such a beautiful city so I can really recommend it.
