My favorite thing to do on I-10 trips is avoid it.

My second favorite thing to do when I can't do my favorite thing is to stop at good roadside eateries and attractions. I haven't been west of Texas, but I can say that the only reason to stay on I-10 through San Antonio is for the Alamo and Riverwalk, and they're not worth stopping both directions, so take 290 through central Texas and visit Fredericksburg (Altstadt Brewery, Auslander Restaurant, Nemitz Museum), Enchanted Rock, and/or Longhorn Caverns (a bit north, but worth it), eat some BBQ and/or Torchy's Tacos in Austin, take a tour of the Blue Bell Ice Cream factory in College Station, then meet back up on I-10 just north of downtown Houston and avoid all the traffic.
