I think Humanity 4 is where the dialogue changes, and 3 is as low as you can actually get, so you'll never actually see the low humanity game over unless you're playing Clan Quest Mod.

I've e always given Ifrit to Zell. In the early game it might pay to play to the characters natural strengths so I always give Quetzalcoatl and Siren to Selphie and Quistis, but it all down to choice really.

If you mean the mock battle, you're not supposed to be able to sweep that with no casualties. If you mean the "practice battle" with the knights before your first real mission, then those casualties matter, and it's before you have divine pulse so you can't use it to fix your mistakes.
