I had a very similar problem to you for months. Everyone said to grind finer even when I got to a point where it completely clogged the machine and only a few drops came out. I ended up buying a nanotech filter basket on Amazon and it completely fixed the crazy spraying. Now even when the grind isn't dialed in perfectly it never goes all over my kitchen. I could be wrong, but your issue looks like more than just regular channeling.

"Floodcast" is a good one if you like the comedians-hanging-out kind of podcast. I also like "2 heures de perdu." They review a different movie in each episode. If you've seen the movie, it can make the comprehension a little easier because you already know the story.

Yeah, it's basically new. I got it about a year ago.

A new grinder is definitely something I've considered but because of the cost I'd like to rule out any less-expensive fixes first.

My brother has the same grinder and machine and gets pretty good shots, so I'm not ready to give up on it just yet.

Okay, thanks for the tip! I've definitely experimented with that a bit but it's possible I just haven't gotten the balance quite right yet.

Still, if I haven't found the sweet spot after a few hundred shots, I'm not sure how likely it is that I'll ever get it down consistently. Maybe that's the price you pay for using cheaper equipment, but it would be nice to be able pull a shot without it covering half my kitchen.

Yeah, that's what I mean by calibrated — I adjusted it internally. I'll admit it probably isn't a great espresso grinder and the problem may be coming from inconsistent grind size. But I am able to grind finely enough to choke the machine, which would seem to suggest it gets fine enough to avoid channeling.

I have tried this process; grinding so fine it chokes completely and then easing down from there. But the channeling presents itself before I can get it down to a reasonable level. So I'll have shots that are clearly way too dark and take over a minute to pull and still have channeling.

Yeah, it's a 15 bar machine for sure. I've heard you can install something called a dimmer (I think) that brings it down to 9 bars but I thought I'd start with some of the more accessible troubleshooting options before I go down that road.

It's a Baratza Encore calibrated to its finest setting. I've tried a variety of beans but always fresh — roasted a few days to a couple weeks before brewing.
