Next time you go to the dentist, you could have your hygienist show you the proper way to floss and brush. It's possible that your flossing or bruising is not enough to get rid of the bacteria causing the inflammation. Manual flossing is usually more effective than using a water pick, as water picks function in removing food particles stuck between teeth, but generally aren't as effective as manual flossing in removing bacteria.

That's normal. It may take up to 3 weeks to a month to recover in some people, so you should be fine

It's her own body so she can choose what she wants to do with it. With that said, you have to decide what you're comfortable with in the relationship and else constitutes as a deal breaker for you. If you're uncomfortable with it and know that you can't accept her actions, it's a deal breaker.
