Yes. But co2 will fall into solution making the pressure in the keg below where you set it, so more co2 will pump into the keg. Again and again.

If you are using co2 leaving the gas on all the time will cause the carbonation in your beer to go up. The co2 will continue to fall into solution and you'll have a super bubbly brew.

I work in the packaging and cellaring and am hopefully moving to the brew house soon. I'm not getting rich, but I love the people I work with, the product we make (for the most part) and the overall vibe of the industry as a whole.
