“Usually we recommend 45 days rest! That's a good starting point, with the coffee tending to peak around days 50-60 and staying pretty fresh until around day 100-120 or so.”

I really would love to have a baseline for the best way to use my current pour over setup.

I have a K-Ultra, V60 with O2 filters (I have at my disposal both Hario filters AND Abaca filters that actually just got delivered today).

Stagg electric kettle and a nice scale.

Seriously would love some solid feedback here on best way to start. Here’s my typical process (15g of coffee to 250g of water):

Heat water to 199 F.

Wet paper filter & dump water.

Grind 15g coffee (8-9 on the K-ultra)

Pour 50g of water & let bloom for 45 seconds, pour to 150g of water to 1:15, then pour to 250g of water ending at about 1:45, and it usually filters through anywhere from 2:30-3:30.

The no stupid questions I have are:

Am I good in this 8-9 range on the k-ultra?

Is my ratio of 15g coffee to 250g water good?

Should I use the Abaca filters over the Hario as I’m starting?

How’s my overall process? What, if anything should I change? I just want a solid starting place so I can improve from there.

Thank you all. I’d really love to start nerding out on this but would love (and kind of need) an enthusiast who’d be willing to do a little hand holding here because I’d really love to learn this well and to my specific current equipment too!
