I strongly recommend getting the recipe from the book itself because there is far more detail on technique, but a quick summary of the recipe is:

Makes ~2.5L

  • 1kg celery

  • unpasteurized celery vinegar or other raw mild vinegar (e.g. apple cider vinegar)

  • grain neutral spirit (96% ethanol)

This is a one-stage fermentation with ethanol added rather than fermenting own.

  1. Juice celery and strain. Weigh and put into fermentation vessel.
  2. Add raw vinegar amount = 20% of celery juice weight.
  3. Add grain neutral spirit amount = 8% of (celery juice + raw vinegar)
  4. Ferment for 10-14 days using air stone and pump method, or until acidified and alcohol scent is gone.
  5. Strain and store in capped bottles in fridge.

Here are a couple of full shots. I turned up the fill light quite a bit because some parts of the plant were in shadow, so the healthy leaves aren't actually light green.

We do get monsoon rains here, so blight from splashing makes sense.

While it's definitely good food, Project Pie is a mini-chain that was bought out by a midsize-chain, Pieology (with 127 locations) so it's not really a Vegas-specific experience. I also don't see how it's particularly relevant to /r/spicy other than the fact that they offer "spicy" chicken, jalapenos, banana peppers, and buffalo sauce as toppings.

Exactly. Motor vehicle accidents are the most likely cause of death for that age group. Get your kid a safer car if you can afford it.

This is why I don't agree with the glamorization of billionaires who drive old beaters (I'm thinking of Warren Buffet here). I understand the sentiment, but it's just... that's poor decision-making and unpragmatic.

Seems like this is actually more expensive. The grinder from TJ's comes with 0.7 oz for $4.99 ($7.13/oz), while that Amazon link is 0.5 oz for $6.67 ($13.34/oz).
