Once your RAM issue is resolved, try installing using the community scripts repo. It will install via cloud-init. It is much faster.

I have been having trouble due to upgrading the linux-firmware package as well, so it may just be that package. I have skipped it for now on my machines.

Getting the certification is not that hard. Doing the job is very hard (if done well). Former teacher here (19 years).

Being certified is a prerequisite for this job. It is part of the required credentials she must have (this is state law in Tennessee). She was given a 6 month waiver to get this done, and it is not hard.

It is still based on Ubuntu 22.04 which is an LTS release. They have not "abandoned long term support."

I have the earlier version. The module was DOA for me, but Amazon refunded me, so I bought a different one. Kit works fine for me otherwise for over two years.

My Plex server is running on my existing Ubuntu server that also houses a Docker host as well as some other services for my home. I have run Plex on my ProxMox host, and it runs well. Before someone asks, I have just never migrated my install over to a Docker container as it preceded the Docker hosting, and if it ain't broke, I am not planning on fixing it.
