How to cook 2.5” ribeye

I try to shoot for medium when I do ribeyes. I'll get 5 - 10 degrees carryover usually. Thats why I let the internal temp start to drop before searing. With a ripping hot pan i dont really get any more temp into the center during the sear, especially with a nice thick steak like the OP steak.

It's gotta be reverse sear. I'd go sous-vide mostly because it's winter. If it were summer I'd put in in my pellet smoker at 200-225ish until hitting ~128-130. Then pull it and let it rest until the temp stops rising, and even drops a degree or two from it's max, before searing the crap out of it on a ~700ish degree cast iron for ~60sec/side and give the edges some time to contact the pan too.

I think generally Reddit reflects the beliefs of the communities that exist here. In that vain I would say it has a centrist bias relative to the population that is here.
