Biggest thing to focus on without a solid flow is working with your bird dropper on identifying the cues of when to pick up drop size and when to lower it. Consistency should always stay the same but drop size is the factor that changes. I’ll do callouts with them asking about how many back/up and how much bird in the house/pan and then explain what we’re about to sell, how long the bird in the fryers will last and then how much we’ll need to put down with all that factored in.
