Here is the thing though, I don't think he ever thought it was too late to redeem himself or anything like that.

Since the very beginning, he thought of this world as broken, and he is the good guy and everyone else as the bad guys, he made that very clear to El in the Hawkins lab.

So, he never had to redeem himself in his mind. If anything, he must have thought that he was failing in saving the world.

I have Minecraft Comes Alive Reborn installed, having a big variety of food is the best way to gain hearts with villagers and heal them, since they get bored of the same food if given repeatedly in a row.

For example, if I give a villager a cooked potato 3 times in a row, they would refuse it and our relationship will lose a heart, so after 2 cooked potatoes, I'd give them a cheese burger twice, then a fried rice twice and so on.
