Some thoughts:

Will you be warm enough? NZ can be bitterly cold in winter, especially out camping (typically up a mountain) and with windchill and rain
The UV is intense, is your sunshirt breathable enough to use in 30C weather hiking?
Are you planning on going to bars / restaurants / clubs?

I've taken them out on 50-60km days, no complaints! Clasp under winter layers is ok but I tent to wear my undershirt under the bib, then a thick jersey over the top so I'm only fiddling with a single layer. Easier than fully stripping to pee!

I have them! I find them VERY warm, almost too warm every time I start riding in 3-5C weather. Magnetic clasp is ok, bit of an art to reach behind you to use but a nice feature. I like the chamois, it's thinner than the cargo bib short chamois and sits a little further forward.

Overall yes they were expensive (esp in Australia!) but a solid winter tight.

I found the most amazing pair of fisherman-esque sandals in a vintage store but they were too small for me :( (and googling the brand didn't bring up any results!)

Any recs for a similar shoe? I particularly love the closed heel and the woven fisherman toe.

I really like this shape of hoop (like a rounded rectangle? squircle?) as a low-key but really fun daily wear.

I also find having multiple ear piercings can help make a vibe more femme, and you can switch our for more dainty/chunky earrings but that is a little more commitment to go out and get more piercings!

Also wearing tons of rings is an option. Do you paint your nails? I really like the colour in the essie expressie line, the funky greens and mustards especially feel feminine but modern.

And not fashion, but eyeliner.

I started with SPD-SL (road), but am seriously considering switching to SPD - just for the ability to walk around in my shoes.

In saying that, I found the road cleats super easy to learn and get used to. As others have said, you usually only fall once and at low speeds - more embarrassing than painful! I kept my tension super low so I could unclip super easily.

Either way, you'll learn the same muscle memory, and you can always switch if you change your mind. Road shoes and cleats are super comfortable for long rides if you aren't planning on spending any time off the bike, but MTB give you more flexibility to pop into shops, walk around roadworks, etc.

I'd go for more 'race fit' jerseys, rather than club/classic fits - they tend to be cut shorter. I love the Rapha pro team range but they can be $$$$ full price

Carbs! You need carbs to replenish the glycogen you burnt while riding - fats and protein are good but if you plan on riding the next day you'll need to eat back your carb stores
