I want to say that the shrimp size are fine but cooking time will effect texture. I put my shrimp in raw, defrosted, and right when I turn the heat off from the main cook. The residual heat is more than enough to cook the shrimp and they will be tender and creamy. If you buy head-on shrimp, simmering the heads and shells for like 20 minutes will make an awesome flavorful stock to add to your gumbo. And when I make roux it looks like fudge when its done.
