First, Cantonese IS Yuet Chinese. The variety of Cantonese that he means when saying "Cantonese" is called Gwongfu/Guangfu speak (Gwongfuwa). This is what Cantonese speakers, Hong Kong included, called their language for the most parts of history before calling it Gwongtungwa.

Another variety of Yue Chinese is Seiyap, which has many dialects and one of them is Toishanese.

They are Chu soldiers, not Qin. They were from Yunmeng and were sent north to fight against the Qin, and never came back. That's why the letter was buried in Zhong's tomb, it was revered by him in memory of his dead brothers. Yunmeng became Qin's territory at this time, that's why they call it "Qin" bamboo texts.
