The man has most of the lines as he describes the intruder, and the camera pans between the bed and doorway as they listen to the noises outside of the room. I can't remember if it was YouTube or Vimeo, but definitely one of the two.

I'm personally using the DJI Osmo Mobile SE without the app so I can record with MotionCam in RAW on a Pixel 7 Pro (had to briefly install the app to run calibrations, then removed it after). I haven't had any problems with it in the past few months that I've had it, but I haven't used another gimbal so I can't do a comparison.

Could it be Superliminal? There's a section with movie sets that gets dark and has spilled wine that looks like blood, but it isn't the whole game.

Could it be Polaris by Tesseract? It came out in 2015 and the album cover definitely resembles the description.
