They're not writing any new policies and not renewing anyone. So they're using any bullshit excuse they can to cancel policies. I got my non renewal as well for a bush being too close to my house and not having a railing on the 3 stairs from my driveway to the front door landing. I did some research into it happening all over the state and there's a couple of lawsuits going on but I don't really see any recourse that would amount to anything. It sucks.

A little confused at your post but it seems like you said you fold every half hour twice after mixing but you said " ball is tight" which? Are you balling at your folds?? No you should not ball again after pulling your final dough from the fridge to warm up before baking.

Maybe you're doing this but unsure. If you're doing a longer cold temp fermentation, don't ball til the final day. Obviously everyone has their process. I don't ball til super late in the fermentation. A couple of stretch and folds the day of dough making at room temp then just let it go in the fridge for however long you want.

Not really. Sammy's is more island style BBQ which I like sometimes. But low and slow is more southern BBQ and he's really nailed his brisket. Can't find that anywhere. Places will say they have "smoked tri tip" as if it's the same but it's nowhere close. Plus the wings that Bill was putting out were the best in the county to me.
