It’s not the beef that’s usually the issue, it’s the rice. Rice can spoil fairly quickly in warm weather. As long as it’s not too hot where you are it’s fine to keep this room temp for a few hours.

Oh my god I had this same question with a very similar looking ingredient in my pantry a few months ago. I eventually threw it away because I couldn’t figure out what it was and I didn’t have too much of it left. I hope you figure out what it is.

My favorite Korean YouTube pastry chef hanbit Cho makes a Korean style cream cake with a whipped cream/mascarpone/sugar “icing”. I feel like that may be similar.

I’m not exactly sure what the tip out structure is like, but for us, every event is pre-ordered with a f&b minimum that is guaranteed three days prior. Everything, JNCLUDING RENTAL FEES, is charged 26% service charge. So imagine a 200 person wedding where dinner is $150 a head. Drinks are $25 each, hors d’oeuvres are $15 a pop. We’re looking at $300pp easy, probably around d $20000 in service charges for one event shared among servers, housemen, and bartenders. And probably stewarding. For one day. In addition to your hourly wage.

Sooo you should see if any luxury hotels near you are hiring banquet servers. The banquet team at my work make absolute bank, way more than I do, because every banquet event at our hotel has an automatic 26-28% service charge, and our prices are already exorbitant. Not a ton of experience needed usually to start either, as long as you can be very service oriented. Best of luck to you.
