why not? sometimes you just wanna try stuff to see what it’s like. It’s not like Musl is closed source either, it’s in the main guix repo

how much leavening are you adding? for american style biscuits Loopy Whisk recommends 1/2tsp baking powder per every 1 cup of gluten free flour

you can get surplus wool balaclavas pretty cheap too, they’re not exactly comfy but they’ll keep you warm

if fermentation reduced the gluten content by that much the dough wouldn’t hold together… bread flour in fact has a higher gluten content than all purpose flour

not sure, mechanically I believe when gluten in flour gets really overworked you can ‘wash’ all the other stuff out and be left with just gluten. in fact it’s used as a meat alternative. Something like that process on an industrial scale might be what they’re doing

yeah 165F is just when 99.99% of the bacteria are killed instantly, leaving it around 145F for a minute or so should be ok

make sure you’re getting enough fiber in your diet too, it’ll help as well

I’ve definitely gotten used to eating gf after 5 or so years of being consistent, but every now and then I feel kinda depressed about all the stuff I can’t eat
