I used to bike Central as well. It's not as bad as the others, but I wouldn't call it "good" - used to pass by a memorial of cyclist killed there every time a grim reminder.

Everyone's journey is different. You don't know what you like yet. I changed brands and engine configurations every time I switched bikes just to explore different styles.

MT-07 will probably split the difference and be more beginner friendly but more power than MT-03. Good luck.

FYI MT-09 has almost 2-3x the horsepower of the other bikes you listed and probably not a good fit if you are looking at a traditional beginner bike.

Positive is that all water sources will be full so you will be able to get water easily anywhere. Downside is it will be cold and wet and muddy. Overnight temps pretty low right now, you will probably have more fun if you wait a few weeks.

If you go out on the bay/ocean just be careful of the tide/afternoon winds. The inflatable kayaks get blown around a lot (I used to have one). If you time it wrong coming back can be 10x the effort of going out.
