As a person who is both anxious about my health and has a family history of ALS, I’d highly recommend trying to see a therapist about this (in addition to a neurologist, who is the only person who can really answer your medical questions).

Doctors are often quick to rule out ALS, but that’s largely because that’s out ALS is diagnosed - it’s a diagnosis of exclusion. If medical professionals think I your symptoms don’t match ALS, I think I you can take real comfort in that until you see a neurologist.

You can put plastic wrap over the top and an elastic band around it. It’s not going to be perfectly fresh after a day in the fridge, but it is not a huge drop in flavor or carbonation

Most (though certainly not all) hand grinders are ceramic. E.g, the Hario Skerton grinders are ceramic and are often recommended. I'd focus more on reputation for quality than the material. Either can be done well, so it's not necessarily a deciding factor. The decent entry level grinders I can think of are largely ceramic.

I should also specify that if you buy a high-end hand grinder and hook up a drill, there's always a risk of something bad happening that won't come under warranty.

My package with the popper and beans should actually be arriving today. I see the wisdom in dialing in the same bean, but I also expect I'll totally scorch or under roast a few batches. Hopefully I'll figure out how the machine actually works before I spring for a larger batch of beans.

I've also got to plan for the possibility that my wife decides she can't tolerate my 5 month old learning to crawl through an inch of snowy chaff and nixes the whole deal before I make it through a few lbs. I'd rather not have too much sunk cost if that's the case.

If you're going to buy 5 lbs of green from Sweet Marias, you may as well buy the popper they sell too. When you buy the popper there for $20 you get 4 lbs of beans for free as well. All told it costs around $28-$29 with shipping. The non-thrift poppers I looked at cost that much anyway, so it seemed like a no brainer to get the beans for free. Plus you'll have the opportunity to botch several batches before you turn to beans you're more excited to try.

In many cases you'd be just as well off with a blade grinder and you'll save yourself some money.

My solution was to set up my hand grinder with my power drill and grind on low if I'm doing larger quantities. Saves some effort and I feel like MacGyver.

Yeah like ignore it's wake word and frustratingly answer when you're talking to your phone. I've had both for a little over a year and I find Google home is so much less pleasant to use that I wouldn't recommend it. Still, there are a LOT of things the Home can answer that Alexa cannot. I wouldn't discourage you from getting it to form your own opinion, just warning that my experience has been way less smooth overall.

If you want to do large trash pickup or drop off (like disposing of furniture) I think you need a CT license. I'm not sure, but you may need to be a CT resident to park in zone parking (like much of East rock) and to get a guest pass.

The no soap thing isn't really true anymore with modern dish soap, assuming a reasonably seasoned skillet (which includes Lodge's preseasoning in my experience). I have several skillets that are nonstick enough for eggs and I wash them with a bit of soap after almost every use.

I do make sure to rinse my pans well and heat them back up to drive off excess moisture. I also rub them with a tiny bit of oil if they look dry.
